Prep Time: 30 minutes
Cook Time: 15 minutes
Total Time: 45 minutes
Servings: 4 people
Ingredients
New York or Ribeye Steaks:
- Olive oil (truffle-infused preferred): 2 tablespoons
- Coarse salt: 1 tablespoon
- Pepper: 1 teaspoon
- Brown sugar: 1 teaspoon
- Fine ground black coffee or espresso: 1 tablespoon
Mashed Cauliflower:
- Heads of cauliflower: 2 large
- Cream cheese: 1/4 cup
- Butter: 2 tablespoons
- White pepper: 1/2 teaspoon
- Salt: 1 teaspoon
Asparagus:
- Olive oil: 2 tablespoons
- Lawry’s garlic salt: 1 teaspoon
Directions
STEP 1
Prep the Steaks: Pat the steaks dry with paper towels. Rub each steak with olive oil, then generously season with coarse salt, pepper, brown sugar, and ground coffee. Let them sit at room temperature for about 20 minutes.
STEP 2
Cook the Steaks: Heat your grill to high. Once hot, grill the steaks for 2-3 minutes per side for medium-rare, or adjust the time for your desired doneness. Remove from the grill and let rest for a few minutes.
STEP 3
Make the Mashed Cauliflower: Cut the cauliflower into florets and steam until tender. In a bowl, mash the cauliflower with cream cheese, butter, salt, and white pepper until smooth and creamy.
STEP 4
Prepare the Asparagus: Trim the asparagus and toss with olive oil and garlic salt. Grill over medium heat until tender and slightly charred, about 5-7 minutes.
STEP 5
Serve: Arrange the steaks, mashed cauliflower, and asparagus on plates.
Serve immediately for the best flavor and enjoy a meal inspired by Brandi Carlile’s favorite dishes!
