Ingredients

Peaches: 1.5 lbs, firm-ripe, pitted and cut into 1-inch chunks
Fresh Lemon Juice: 2 tbsp
Scotch Whisky: 2 tbsp
Granulated Sugar: 2 tbsp
Brown Sugar, packed: 6 tbsp
Butter: 6 tbsp, cut up
All-Purpose Flour: 3/4 cup
Cinnamon: 1/2 tsp

Directions

STEP 1
Prepare the Oven and Dish: Preheat your oven to 400°F. Grease an 8″ x 8″ glass baking dish.

STEP 2
Prepare the Filling: In a large bowl, toss the peaches with the lemon juice. Add the whisky, granulated sugar, and 2 tbsp of brown sugar; toss again to coat evenly. Spread the peach mixture in the prepared baking dish and dot with 1 tbsp of the butter.

STEP 3
Make the Topping: In the same bowl used for the peaches, combine the flour, cinnamon, and the remaining 4 tbsp of brown sugar. Using a pastry blender or your fingers, cut in the remaining 5 tbsp of butter until the mixture resembles coarse crumbs. Gently press the crumbs together to form small clumps.

STEP 4
Bake the Crisp: Sprinkle the topping evenly over the peach mixture. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the peaches are bubbly and hot.

STEP 5
Cool and Serve: Allow the crisp to cool for about 20 minutes. Serve warm, optionally pairing it with a scoop of vanilla ice cream or frozen yogurt for an extra special touch.
