Ingredients

All-Purpose Flour: 2 1/2 cups
Salted Butter, Cubed: 20 tablespoons
Ice Water: 1/2 cup
Sweet Cherries (Pitted): 6 cups
Butter: 3 tablespoons
Sugar: 3/4 cup
Water: 2 tablespoons
Cornstarch: 3 tablespoons

Directions

STEP 1
Prepare the Crust: In a large mixing bowl, combine the flour and butter. Use your hands to massage the mixture until it feels moist and starts to come together. Gradually add ice water, a tablespoon at a time, mixing until the dough forms into a ball. Divide the dough into two equal parts, shape each into a disc, wrap it in plastic, and refrigerate while you prepare the filling.

STEP 2
Make the Filling: In a large skillet over medium heat, melt the butter. Add the pitted cherries and sugar, and cook until the cherries are tender but still hold their shape, about 8 minutes. In a small bowl, mix the water and cornstarch to create a slurry. Add this to the cherries, stirring constantly until the mixture thickens into a paste. Remove from heat and let it cool slightly.

STEP 3
Preheat and Prepare: Preheat your oven to 375 degrees Fahrenheit. Remove one disc of dough from the refrigerator, roll it out into a round shape, and fit it into a 9-inch pie plate. Pour the cherry filling into the crust.

STEP 4
Lattice and Bake: Roll out the second disc of dough and cut into strips. Weave the strips over the filling to form a lattice top. Trim and crimp the edges decoratively. Bake in the preheated oven until the crust is golden and the filling is bubbling, about 50 minutes. Let the pie cool on a rack for 1 to 2 hours to allow the juices to thicken before serving.
