Ingredients

Butter: 1 1/2 cups (3 sticks), softened
Honey: 3/4 cup
Vanilla extract: 1 teaspoon
Rose water: 2 teaspoons
Cardamom: 1 teaspoon
Pistachios: 2/3 cup, finely ground
Whole wheat flour: 1 3/4 cups
All-purpose flour: 1 3/4 cups
Semisweet chocolate chips: 1/2 cup, for melting
Chopped pistachios: for garnish

Directions

STEP 1
Instructions: Cream together the butter, honey, vanilla extract, and rose water in a large bowl until smooth.

STEP 2
Instructions: Add the finely ground pistachios, cardamom, and both flours to the butter mixture. Mix until thoroughly combined.

STEP 3
Instructions: Divide the dough into 4 sections, wrap each in parchment paper, and refrigerate for at least 2 hours or overnight.

STEP 4
Instructions: Preheat the oven to 325°F. On a lightly floured surface, roll out each dough section to about 1/8 inch thickness. Use a 3-inch heart-shaped cookie cutter to cut out cookies and place them on an ungreased cookie sheet.

STEP 5
Instructions: Bake the cookies for 13-15 minutes or until the edges are lightly browned. Let them cool on the cookie sheet for 2 minutes before transferring to a wire rack to cool completely.

STEP 6
Instructions: Melt the chocolate chips in a double boiler or microwave. Using the back of a spoon, draw a heart shape with the melted chocolate in the center of each cookie and sprinkle with chopped pistachios.
