Ingredients
- Black beans: 1 can (15 oz), rinsed and drained
- Cooked lentils: 1 cup
- Avocado: 1, diced
- Chopped lettuce: 1 cup
- Diced tomatoes: 1/2 cup
- Chopped red onion: 1/4 cup
- Vegan cheese: 1/2 cup, shredded
- Corn tortillas: 8
- Olive oil: 2 tablespoons
- Cumin: 1 teaspoon
- Paprika: 1 teaspoon
- Salt and pepper: to taste
- Fresh cilantro: chopped, for garnish
- Lime wedges: for serving
Directions
STEP 1
Prepare the Filling: In a skillet, heat the olive oil over medium heat. Add the black beans and lentils. Season with cumin, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until heated through.
STEP 2
Warm the Tortillas: Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and slightly toasted.
STEP 3
Assemble the Tacos: Lay the warm tortillas on a flat surface. Spoon the bean and lentil mixture onto each tortilla. Top with avocado, lettuce, tomatoes, red onion, and vegan cheese.
STEP 4
Garnish and Serve: Sprinkle chopped cilantro over the filled tacos. Serve with lime wedges on the side for squeezing over the tacos before eating.
