Ingredients
Chickpeas: 1 can (15 ounces), drained and rinsed
Red Onion: 1 small, finely chopped
Cucumber: 1 medium, diced
Tomatoes: 2 large, diced
Red Bell Pepper: 1, diced
Parsley: ¼ cup, chopped
Lemon Juice: From 2 lemons
Olive Oil: 3 tablespoons
Salt and Pepper: To taste
Spices: Optional (such as cumin, coriander, chili flakes)
Directions
STEP 1
Combine Ingredients: In a large mixing bowl, add chickpeas, red onion, cucumber, tomatoes, and red bell pepper. Toss them together to mix well.
STEP 2
Season: Sprinkle chopped parsley over the mixed ingredients. Add lemon juice, olive oil, salt, and pepper. If desired, include your favorite spices like cumin or chili flakes for extra flavor.
STEP 3
Mix and Chill: Stir all the ingredients until they are well coated with the dressing. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend.
STEP 4
Serve: Once chilled, give the salad a final stir and taste for seasoning adjustments. Serve chilled or at room temperature, garnished with additional parsley if desired.
