Cook Time: 10 minutes

Total Time: 20 minutes

Servings: 2 people

Ingredients

Penne Pasta: 500g
Garlic: 1 clove, finely chopped
Cherry Tomatoes: 1 cup, halved
Chili Pepper: 1, deseeded and finely chopped (optional)
Olive Oil: as needed
Fresh Basil: a handful, torn
Salt: to taste
Black Pepper: to taste
Canned Chopped Tomatoes: 1/2 cup (optional, for extra juiciness)
Parmesan Cheese: for garnishing

Directions

STEP 1
Boil the Pasta: Fill a large pot with water, add a dash of salt and a splash of olive oil, and bring to a boil. Add the penne pasta and cook according to the package instructions until al dente.

STEP 2
Prepare the Garlic and Chili: While the pasta cooks, heat a small amount of olive oil in a pan over low heat. Add the chopped garlic and chili pepper. Sauté gently to release their flavors without browning the garlic.

STEP 3
Add Tomatoes: Increase the heat to medium and add the cherry tomatoes to the pan. If using, also add the canned chopped tomatoes for extra juiciness. Cook until the tomatoes are soft and begin to break down.

STEP 4
Season: Season the sauce with salt and pepper to taste. Add the torn basil leaves and stir to incorporate. Reduce the heat and let the sauce simmer until the pasta is ready.

STEP 5
Combine Pasta and Sauce: Drain the pasta and add it directly into the saucepan with the tomato mixture. Toss well to coat the pasta evenly with the sauce. Cook together for an additional minute to meld the flavors.

STEP 6
Serve: Transfer the pasta to serving dishes. Garnish with freshly grated Parmesan cheese, a few basil leaves, and a drizzle of olive oil. Serve hot and enjoy the vibrant flavors of this simple yet delicious meal.
