Ingredients:

  • Prawns, peeled and deveined – 200 grams
  • Zucchini, spiralized into noodles – 2 medium-sized
  • Olive oil – 2 tablespoons
  • Garlic, minced – 2 cloves
  • Red chili flakes (adjust according to spice preference) – 1/2 teaspoon
  • Cherry tomatoes, halved – 100 grams (about 10-12 cherry tomatoes)
  • Lemon juice – 1 tablespoon
  • Fresh parsley, chopped – 2 tablespoons
  • Salt and pepper, to taste


Directions

STEP 1
Prepare the Prawns: In a pan, heat some olive oil over medium heat. Add garlic and chili flakes, and sauté for a minute until fragrant. Add the prawns and cook until they turn pink and are cooked through. Remove from the pan and set aside.

STEP 2
Cook the Vegetables: In the same pan, add a bit more olive oil if needed. Toss in the cherry tomatoes and cook until they start to break down. Add the spiralized zucchini noodles and stir-fry for a couple of minutes until they are heated through but still have a bit of crunch.

STEP 3
Combine and Serve: Return the prawns to the pan. Add lemon juice, salt, and pepper to taste and toss everything to combine well. Garnish with fresh parsley before serving.
