Ingredients
- Butter: 2 tablespoons
- Flour: 3 tablespoons
- Garlic powder: 1 teaspoon
- Onion powder: 1 teaspoon
- White pepper: 1/2 teaspoon
- Salt: 1/2 teaspoon
- Chicken broth: 4 cups
- Mixed vegetables (canned or fresh), drained: 15 ounces
- Half-and-half*: 1 cup
Directions
STEP 1
Melt and Mix:
Melt the butter in a large saucepan over medium heat. Add the flour, garlic powder, onion powder, white pepper, and salt. Stir until the mixture is well combined. Allow to simmer for one minute.
STEP 2
Whisk and Simmer:
Gradually whisk in the chicken broth to the butter and flour mixture. Add the mixed vegetables. Let the mixture simmer for five minutes.
STEP 3
Mash Vegetables:
Using a potato masher, mash the vegetables in the pot to your desired consistency. If you prefer a chunkier soup, lightly mash the vegetables.
STEP 4
Final Simmer:
Stir in the half-and-half and continue to simmer the soup for an additional five minutes.
STEP 5
Season and Serve:
Taste the soup and adjust seasoning as needed. Serve hot with your choice of rolls, cornbread, or biscuits.
*NOTE: “Half-and-half” is a dairy product that consists of equal parts light cream and whole milk.
