One of her favorite recipes is Tortilla Soup, a dish that combines her love for fresh, local ingredients and her family’s traditional cooking methods. This soup is a staple in her kitchen, perfect for sharing with friends and family during casual gatherings.

Ingredients

Tomatoes: 6 whole, Roma
Olive oil: 125 ml, divided
Salt: To taste
Onion: 1 medium, diced
Celery: 1/2 stalk, diced
Chili pepper: 2, diced (Pasilla and Jalapeño)
Garlic: 50 g, chopped
Chicken stock: 1.5 liters
Lime juice: 125 ml
Cayenne pepper: 2.5 g
Chili powder: 5 g
Cumin seeds: 5 g, ground
Paprika: 7.5 g
Bay leaf: 1
Chicken breasts: 2, boneless, cut into strips
Coriander: 30 ml, fresh leaves
Pepper: To taste
Tortilla Chips: To taste
Avocado: To taste
Chili pepper: To taste, Jalapeño variety
Sour cream: To taste

Directions

STEP 1
Preheat oven: Preheat your oven to 180°C.

STEP 2
Roast Tomatoes: In a bowl, toss the tomatoes with half the olive oil, 5 g of salt, and a pinch of black pepper. Spread them on a baking pan and roast until light brown, approximately 25 to 30 minutes.

STEP 3
Sauté Vegetables: While the tomatoes are roasting, heat the remaining oil in a stockpot over medium heat. Sauté the onion, celery, chili peppers, and garlic until soft and translucent.

STEP 4
Add Broth and Spices: Add the chicken stock, lime juice, cayenne pepper, chili powder, cumin, paprika, and bay leaf to the pot. Bring to a boil, then reduce to a simmer and cook for 20 minutes.

STEP 5
Add Tomatoes and Chicken: Remove the roasted tomatoes from the oven (the peel should be falling off) and add them to the broth. Add the chicken strips and simmer for an additional 10 minutes.

STEP 6
Blend Soup: Using an immersion blender or transferring in batches to a food processor or blender, blend the soup until smooth. Season with salt and pepper to taste.

STEP 7
Serve: Serve the soup hot in large bowls, garnished with chopped avocado, tortilla chips, chopped jalapeños, and sour cream. You can also add other garnishes like diced red onion, chopped coriander, salsa verde, sliced radishes, or cooked, diced chicken.
