Directions
STEP 1
Prepare the pasta: Cook the pasta according to the package instructions until al dente (firm to the bite). Drain and set aside, reserving some pasta water.
STEP 2
Make the avocado sauce: In a blender, combine the ripe avocados, fresh basil leaves, garlic cloves, lemon juice, and olive oil. Blend until smooth. Season with salt and pepper to taste. If the sauce is too thick, add a few tablespoons of the reserved pasta water to achieve a creamy consistency.
STEP 3
Combine and serve: Toss the cooked pasta with the avocado sauce. Add the halved cherry tomatoes and toss gently. Serve immediately, garnished with additional basil leaves if desired.
