So this recipe inspired by her love for Cambodian cuisine uses the flavors and techniques she enjoys. It’s a simple yet flavorful dish that pays homage to her time in Cambodia, a place close to her heart.

Ingredients

Rice: 2 cups
Coconut milk: 1 cup
Water: 1.5 cups
Chicken thighs: 4, boneless and skinless
Lemongrass: 1 stalk, finely chopped
Garlic: 3 cloves, minced
Ginger: 2-inch piece, minced
Fish sauce: 2 tablespoons
Soy sauce: 1 tablespoon
Brown sugar: 1 tablespoon
Lime: 1, juiced
Fresh cilantro: 1/4 cup, chopped
Green onions: 2, sliced

Directions

STEP 1
Prepare the rice: Rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice, coconut milk, and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.

STEP 2
Marinate the chicken: In a bowl, combine the lemongrass, garlic, ginger, fish sauce, soy sauce, brown sugar, and lime juice. Add the chicken thighs and toss well to coat. Let marinate for at least 30 minutes in the refrigerator.

STEP 3
Cook the chicken: Heat a skillet over medium heat. Remove the chicken from the marinade (keep the marinade) and cook for 6-7 minutes on each side, or until the chicken is fully cooked. Remove the chicken and set aside.

STEP 4
Simmer the sauce: Pour the remaining marinade into the skillet and bring to a boil. Reduce the heat and simmer until the sauce is reduced by half.

STEP 5
Serve: Slice the cooked chicken and serve over the cooked rice. Drizzle with the reduced sauce, and garnish with chopped cilantro and sliced green onions.
