Jennifer Lawrence mastered the ultimate lockdown comfort dish back in 2020 with a classic roast chicken with shallot fried rice. She shared this recipe with Amy Schumer on The Food Network’s “Amy Schumer Learns To Cook” show. Try it out!

Ingredients
- Chicken, whole (about three pounds)
- Olive Oil 2 cups
- Butter, unsalted 12 tbsp, softened and cut into pieces
- Kosher Salt
- Onion 1, halved
- Lemon 1, halved
- Thyme 12 sprigs
- White Wine, dry 2 cups
- Baby Arugula (Rocket) 6 oz
- White Rice 1 cup
- Olive Oil for the pan
- Shallots 5, minced
- Shiitake Mushrooms 1 pound, coarsely chopped
Directions
STEP 1
Preheat the oven to 400 degrees F (200 degrees Celsius). Dry the chicken thoroughly with paper towels. Place it in a roasting pan. Rub the chicken with some of the oil, some of the butter, and 2 tablespoons of salt. Place the onion halves in the pan, drizzle with the remaining oil, and sprinkle with some more salt. Dot the remaining butter around the pan. Squeeze the lemon halves over the chicken and place them in the pan along with the thyme sprigs.
STEP 2
Put the roasting pan in the oven and roast the chicken until it is golden and cooked through, about 1 hour and 15 minutes. Baste occasionally with the pan juices.
STEP 3
While the chicken is roasting, heat a bit of olive oil in a sauté pan over medium heat until it begins to shimmer. Add the minced shallots and cook, stirring frequently, until browned, about 7 minutes. Use a slotted spoon to transfer the shallots to a plate, and sprinkle with a generous amount of salt.
STEP 4
In the same pan used for the shallots, add the chopped shiitake mushrooms. Cook, stirring occasionally, until they are well browned.
STEP 5
Combine the cooked rice, sautéed mushrooms, and shallots in a serving bowl and mix well.
STEP 6
Once the chicken is fully roasted, remove it from the oven. Let it rest for a few minutes before slicing. Toss the sliced chicken with the baby arugula.
STEP 7
Serve the roast chicken and arugula alongside the shallot and mushroom fried rice. Pour a bit of the cooking juices from the roasting pan over the chicken for extra flavor.
