Ingredients
Cauliflower: 1 head, riced
Kimchi: 1 cup, chopped
Garlic: 2 cloves, minced
Green Onions: 3, thinly sliced
Eggs: 2, beaten
Soy Sauce: 2 tablespoons
Sesame Oil: 1 tablespoon
Olive Oil: 1 tablespoon
Salt: to taste
Pepper: to taste
Directions
STEP 1
Preparation: Wash and dry the cauliflower before chopping it into florets. Use a food processor to pulse the florets until they resemble rice grains. Set aside.
STEP 2
Cook Garlic and Onions: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and most of the green onions (reserve some for garnishing). Sauté until fragrant.
STEP 3
Add Cauliflower: Increase the heat to medium-high and add the riced cauliflower to the skillet. Stir fry for about 5 minutes or until the cauliflower begins to soften.
STEP 4
Incorporate Kimchi: Add the chopped kimchi to the skillet and continue to stir fry for another 3-4 minutes, allowing the flavors to blend together.
STEP 5
Add Eggs: Push the cauliflower and kimchi mixture to the side of the skillet. Pour the beaten eggs into the cleared space and scramble until mostly cooked, then mix into the cauliflower.
STEP 6
Season: Drizzle the soy sauce and sesame oil over the fried rice. Season with salt and pepper to taste. Stir everything to combine thoroughly and heat through.
STEP 7
Serve: Remove from heat. Garnish with the reserved green onions. Serve hot as a satisfying meal that is both nutritious and full of flavor.
