Lentils: 1 cup, dried
Olive oil: 2 tablespoons
Onion: 1, finely chopped
Garlic cloves: 3, minced
Carrots: 2, diced
Celery stalks: 2, diced
Tomato paste: 2 tablespoons
Vegetable broth: 4 cups
Diced tomatoes: 1 can (14.5 ounces)
Bay leaf: 1
Dried thyme: 1 teaspoon
Salt: to taste
Black pepper: to taste
Spinach: 2 cups, fresh
Directions
STEP 1
Preparation: Rinse the lentils under cold water and set them aside.
STEP 2
Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until they become translucent and fragrant.
STEP 3
Add Carrots and Celery: Stir in the diced carrots and celery, cooking for another 5 minutes until they begin to soften.
STEP 4
Incorporate Tomato Paste: Add the tomato paste to the pot, stirring well to combine with the vegetables.

Combine Broth and Tomatoes: Pour in the vegetable broth and canned diced tomatoes. Stir to mix all ingredients thoroughly.
