Ingredients

  • All-purpose flour: 2 tablespoons, plus more for dusting
  • Pâte Brisée (Pie Dough): Enough to make top and bottom crusts
  • Granny Smith apples: 12, peeled, cored, and sliced
  • Sugar: ¾ cup, plus additional for pie top
  • Lemon zest and juice: From 1 lemon
  • Cinnamon: 1 ½ teaspoons
  • Nutmeg: ½ teaspoon
  • Ground cloves: A pinch
  • Unsalted butter: 2 tablespoons
  • Egg: 1 large, beaten

Directions

STEP 1
Preheat oven and roll dough:
Heat oven to 375°F. On a lightly floured surface, roll out pâte brisée into two 1/8-inch-thick circles, each slightly larger than an 11-inch plate.

STEP 2
Fit dough into pie plate:
Press one pastry circle into the pie plate. Place the other circle on waxed paper, cover with plastic wrap, and chill until firm, about 30 minutes.

STEP 3
Make filling:
In a large bowl, combine apples, sugar, lemon zest and juice, cinnamon, nutmeg, cloves, and 2 tablespoons of flour. Toss well to coat the apple slices evenly.

STEP 4
Place filling in pie plate:
Spoon the apple mixture into the pie pan. Dot the surface with butter.

STEP 5
Place remaining pastry over filling:
Cover the pie with the remaining pastry circle to form the top crust.

STEP 6
Cut vents in top crust and crimp edges:
Cut several steam vents across the top crust. Seal the pie by crimping the edges to your liking.

STEP 7
Brush with beaten egg and sprinkle with sugar:
Brush the top crust with the beaten egg and lightly sprinkle with additional sugar.

STEP 8
Bake:
Bake the pie until the crust is golden brown and the juices are bubbling, approximately 1 hour. Let the pie cool completely on a wire rack before serving.
