Recipe Time Details

Prep Time: 10 minutes

Cook Time: 20-24 minutes

Total Time: 2 hours 34 minutes – 2 hours 38 minutes

Servings: 4 people

Ingredients

Chicken thighs and drumsticks: 4 each
Salt: 1 teaspoon
Black pepper: 1 teaspoon
Paprika: 1 teaspoon
Buttermilk: 2 cups
All-purpose flour: 2 cups
Garlic powder: 1 teaspoon
Onion powder: 1 teaspoon
Cayenne pepper: 1/2 teaspoon
Vegetable oil: For frying

Directions

STEP 1
Preparation: Season the chicken pieces with salt, black pepper, and paprika. Place the seasoned chicken in a bowl and pour the buttermilk over it. Cover and refrigerate for at least 2 hours, preferably overnight.

STEP 2
Coating the Chicken: In a large shallow dish, combine the flour, garlic powder, onion powder, and cayenne pepper. Mix well. Remove the chicken from the buttermilk, allowing the excess to drip off, and dredge each piece in the flour mixture, coating thoroughly.

STEP 3
Heating the Oil: Heat the vegetable oil in a large skillet or deep fryer to 350°F (175°C). Ensure the oil is hot enough to fry the chicken to a crispy golden brown.

STEP 4
Frying the Chicken: Carefully place the coated chicken pieces into the hot oil. Fry in batches to avoid overcrowding. Cook for 10-12 minutes on each side or until the chicken is cooked through and the coating is golden and crispy. The internal temperature should reach 165°F (74°C).

STEP 5
Draining the Chicken: Once the chicken is cooked, use a slotted spoon to remove it from the oil. Place the fried chicken on a plate lined with paper towels to drain any excess oil.

STEP 6
Serving: Serve the fried chicken hot with your favorite sides, such as mashed potatoes, coleslaw, or cornbread. Enjoy the crispy, flavorful chicken that showcases Whoopi Goldberg’s love for comforting, home-cooked meals.
