Ingredients
Beef: 500g, cubed
Carrots: 3 large, peeled and sliced
Onions: 2, chopped
Garlic Cloves: 2, minced
Beef Stock: 400ml
Red Wine: 250ml
Tomato Paste: 2 tablespoons
Worcestershire Sauce: 1 tablespoon
Bay Leaves: 2
Thyme: 1 teaspoon, dried
Potatoes: 500g, cubed
Salt and Pepper: to taste
Olive Oil: 2 tablespoons
Directions
STEP 1
Preparation: Preheat your oven to 160°C (320°F). In a large oven-proof pot, heat the olive oil over medium heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.
STEP 2
Cook Vegetables: In the same pot, add onions and garlic, cooking until they are soft and translucent. Add carrots and cook for an additional 5 minutes.
STEP 3
Combine Ingredients: Return the beef to the pot. Stir in the tomato paste, Worcestershire sauce, red wine, beef stock, bay leaves, and thyme. Bring to a simmer.
STEP 4
Bake: Cover the pot with a lid and place it in the preheated oven. Bake for 1.5 hours. After this time, add the cubed potatoes and bake for another 30 minutes, or until the potatoes are tender.
STEP 5
Final Seasoning: Remove the casserole from the oven. Discard the bay leaves and season with salt and pepper to taste.
Serve hot and enjoy the rich, deep flavors of this classic dish.
