Jessica Alba made this delightful recipe for Apple Banana Bread Pudding that’s both gluten-free and dairy-free. This dessert is a great example of a creative dish that doesn’t skimp on flavor.
It involves layering gluten-free bread, apples, and bananas in a baking dish, sprinkling them with chocolate chips and light brown sugar, and soaking them in a vanilla coconut milk mixture combined with eggs.
The recipe is baked until it’s crisply golden on top but still slightly soft in the center. This bread pudding is perfect for those who enjoy a warm, comforting dessert with a healthy twist.
Ingredients
Gluten-Free Sandwich Bread: 6 cups, day-old, cut into 1-inch pieces
Apples: 2, cored and cut into small pieces
Bananas: 2, thinly sliced
Light Brown Sugar: 1/3 cup, firmly packed
Vanilla Coconut Milk: 3 1/2 cups
Dairy-Free Chocolate Chips: 1/4 cup
Cinnamon: Optional
Eggs: 6 large (or equivalent in egg whites)
Vanilla Sugar: Optional
Directions
STEP 1
Prepare the Baking Dish: Grease an 8-by-11-by-2-inch glass baking dish. Begin by layering half of the bread cubes at the bottom. Top with a single layer each of apples and bananas.
STEP 2
Add Sugar and Chocolate: Sprinkle half of the chocolate chips and half of the brown sugar over the fruit layer. Optionally, add a sprinkle of cinnamon and vanilla sugar.
STEP 3
Layer and Soak: Add the remaining bread cubes and chocolate chips over the top. Whisk together the eggs and vanilla coconut milk in a large bowl until well blended, then slowly pour this mixture over the bread, ensuring it is evenly soaked.
STEP 4
Bake the Pudding: After letting the dish sit for 20 minutes to absorb the liquid, sprinkle the remaining brown sugar (and optionally more cinnamon and vanilla sugar) on top. Place the dish in a larger baking pan, add hot water halfway up the sides of the dish, and bake at 325°F for about 90 minutes until the top is crisp and the center slightly soft.
STEP 5
Cool and Serve: Let the bread pudding cool for 15 minutes before serving. Enjoy this delightful treat warm, perhaps with a dollop of dairy-free ice cream or a drizzle of caramel sauce.
